Endive
and Shrimp Petals
with Goat Cheese and Pesto

Ingredients:
1 cup Cooked Shrimp
8 oz Goat Cheese (room temperature)
1/3 cup Pesto Sauce
2 tbls. of Parmesan Cheese
2 tbls. Fresh Basil (chopped)
Procedure:
The key to this simple recipe is to make sure that the
goat cheese is at room temperature. Combine all ingredients
with the exception of the basil. Fill each endive leaf
with the mixture. Top with fresh basil.
